Summer is here and with two little ones, life is keeping us pretty busy. To avoid the hassle of getting the kids ready to head out, we are taking time to enjoy them at home. Big thanks to Nabisco for sponsoring this post.
One way we are enjoying time at home with the kids is by cooking together. With temperatures rising and kids growing busier by the day, we are looking for anything that can keep our bellies full and the good times rolling.
While the Olympic Games Tokyo 2020 are postponed, Team USA Olympic-Themed Game Night is not, especially if you are married to a former All-American College track athlete and have a son who seems to be following in his footsteps. We found a way to have our own Team USA Olympic-Themed Family Game Night featuring a fun “wave your flag” RITZ Cracker berry and cheddar board. This snack board is perfect for even the pickiest toddler or adult in your house, and it’s a great addition to any activity.
Looking to recreate this snack board at home with your family? Check out the recipe below (perfect for your summer gatherings with friends and family). All ingredients are available at your local Harris Teeter.
Wave-Your-Flag RITZ Cracker, Berry & Cheddar Board
What You Need
Strawberries, raspberries and blueberries
White cheddar cheese
Blueberry yogurt or cream cheese spread
Fresh mint sprigs
Make It
Place strawberries, raspberries and crackers in alternating rows on wooden board or tray as shown for stripes on flag. Add slices of cheddar cheese between the crackers. Place a small bowl of yogurt in top left corner of the board; top with blueberries for stars. Garnish with mint.
This fruit and cheese board can be tailored to any number of servings, depending on the size of your gathering. Use a guideline of 2 Tbsp. yogurt and 1 oz. EACH of cheese and crackers. For the 16 servings shown here, figure on purchasing 16 oz. of cheese and 2 cups yogurt. Have plenty of RITZ Crackers on hand for topping along with the berries for dipping.
Tips
Add other cheese to board, such as a brie cheese log. Adjust the amount of cheddar to compensate.
You will need a total of 16 oz. cheese for 16 servings.
As a way of enjoying our snack board for our Family Game Night, and creating more family time, we decided to do a trivia night discussing facts about famous Team USA Olympians who attended historically black colleges and universities such as Wilma Rudolph. We made online note cards with their names and alma maters and practiced the words with our son Jackson. This was a great way to celebrate Team USA Olympic and African American history over fun food with the family.
As a graduate of Howard University, celebrating the tradition of HBCUs is a big deal in my family, and a tradition I am excited to pass on to my kids. With both the Olympic Games Tokyo 2020 and many HBCU sporting events/homecomings being postponed, I can’t think of a better time to celebrate these schools and their contributions to the Olympic Games with my family, through food and fun.
