Beans are a classic southern dish and they are one of my favorites. Paired with salted pork, especially ham hocks, and fresh white rice, I can’t get enough of them and always request them for holiday meals. Additionally, cooking lima beans can be a delicious and nutritious addition to your meals. Here are six ways to prepare lima beans:
6 Ways to Cook Lima Beans For An Easy Southern Dinner
1)Boiling: Start by rinsing the lima beans and then placing them in a pot with enough water to cover them. Bring the water to a boil, then reduce the heat and simmer for about 30-45 minutes until the beans are tender. You can add seasonings like salt, pepper, garlic, smoked meats or herbs to enhance the flavor.
2)Sautéing: Heat some oil or butter in a pan and add chopped onions, garlic, and any other desired vegetables. Once they are softened, add the lima beans and cook until they are heated through. Season with salt, pepper, and herbs for added flavor.
3)Roasting: Toss the lima beans with olive oil, salt, pepper, and any desired seasonings. Spread them out on a baking sheet and roast in the oven at 400°F for about 20-25 minutes until they are crispy on the outside.
4)Slow Cooking: Combine soaked lima beans with broth, vegetables, and seasonings in a slow cooker. Cook on low for 6-8 hours or on high for 3-4 hours until the beans are tender and flavorful.
5)Mashing: Cook the lima beans until they are very soft, then mash them with a fork or potato masher. Add butter, salt, pepper, and herbs to taste. This makes a delicious side dish or spread for toast and can be made it to patties for a veggie burger.
6)Salad: Mix cooked and cooled lima beans with chopped vegetables, herbs, olive oil, vinegar, and seasonings to make a refreshing bean salad. This is a great option for a light and healthy meal or side dish. Add fried oysters or grilled shrimp for added protein.
