Start by melting the butter in a skillet and then add the bell peppers, onion, celery, jalapeño, and seasonings. Cook for about six minutes until the vegetables are soft. In a slow cooker, combine the crawfish, cheeses, cooked vegetables, Creole mustard, Worcestershire sauce, and hot sauce. Let it cook for about 45 minutes, then stir in the lemon juice, parsley, and green onion. Serve with crackers, and get your dip on!
